Sear the meat on the top/bottom sides for about 2 minutes and then the edges for about 30 seconds. You can let the roast sit overnight if you have the time, or you can start cooking immediately.
Put the rack in your instant pot and set the tri tip on top of it.

This is an update from when i originally posted this recipe because i love my instant pot and use it all the time. Rub in and on sides as well. Once hot add oil to the pot.
If it’s raining outside, use your air fryer or mealthy crisplid on your instant pot, mealthy multipot or pressure cooker. 1 pkg crimini or portobello mushrooms. Mix together ingredients for dry rub and pour half on top.
Brown the roast to your color of preference. Place in the fridge for at least 8 hours but ideally 24 hours.
