Add all the ingredients to the pressure cooker (or instant pot) except the potato, carrot, and cabbage. Carefully remove oxtails and set them aside in a large bowl. Heat instant pot on saute.

Add the oxtails to the pot. Add onion to instant pot and cook, stirring until slightly brown, adding more oil as needed. And thanks to the instant pot, you can pressure cook and enjoy this meaty, succulent.

If you want to cook oxtails on the stovetop, place the oxtails, salt, and any other seasonings you want to use in a large, heavy stockpot. Turn on saute button and brown oxtails. Place the lid on the instant pot and turn the knob to “sealing’.

Cover and lock the instant pot lid into place and make sure the vent is closed. Turn on the pressure cooker and select sauté. Add some vegetable oil into the inner pot of your instant pot.

Turn on high pressure and set timer to 35 minutes. Place the oxtail into the instant pot and add one can of drained whole tomatoes. Set the manual timer for 40.

Pour the broth into the pot, then sprinkle the oxtails. Carefully add browned oxtails in instant pot. Remove the oxtails from the pot.
