Preheat a pot over medium heat and add in the sausage. Several of my dinner recipes (especially the cajun ones) feature smoked or andouille.

Heat a large pot or dutch oven with a lid to medium heat.
How to cook andouille sausage in a pan. Slice the andouille sausage and chop the onion, garlic and tomato. To cook sausages by frying, heat 1 tbsp oil in a frying pan. Reduce heat to low, cover and simmer 6 minutes.
Andouille is a versatile cooking ingredient. Add garlic and sausage and cook until the sausage is browned, being sure to stir so that the garlic does not burn. Spread out into a single layer and return to the oven.
Add the olive oil and sausage to a large pot over medium heat. You can also bake or boil it. Cut smoked sausage sections in half lengthwise or into 1/2″ slices.
If you haven’t noticed, i’m a fan of smoked sausage. Lightly spray pot with cooking spray and place sliced sausage in skillet. Cook for a few minutes until the sausage is browned and cooked through.
Bake for 15 to 20 minutes, stirring once or twice during cook time to ensure even cook and prevent sticking. Add drained and rinsed beans and the undrained tomatoes with green chilis. Once sheet pan and oven reach temperature, remove sheet pan from oven and pour the sausage and veggies onto the sheet pan.
Clean the mussels and discard any with damaged shells (for full cleaning and debearding instructions, see above post). Add the sausage to the pan and turn them occasionally with tongs or a spatula so they brown evenly. Heat oil over medium heat, add onion and cook until translucent.
How do you cook andouille sausage on the stove? Picking the right sausage for this dish is important. Slice the sausage into ¼ inch slices on the bias and add to the pan.
Sprinkle with the remaining cajun seasoning. Sausages can also be baked in the oven (a good method to use if you’re cooking something else in the oven). Take a sharp knife and cut the sausage from one end to the other into small pieces about half an inch big.
Heat oil in a large. Mix together the cajun seasoning, onion powder, black pepper, thyme, oregano in a small bowl. Heat up a skillet over medium heat and add about 2 tablespoons of vegetable oil to the pan to keep the sausage from sticking.
Cut the andouille sausage into bite sized slices, remove any tails from the shrimp, finely dice the onion, and mince the garlic. Add olive oil, chopped onion, peppers and garlic and let cook stirring occasionally for 5 minutes. Cut smoked sausage sections in half lengthwise or into 1/2″ slices.
If baking, preheat your oven to 350 f and place the links on a sheet pan. Cook for 5 minutes until the leeks begin to soften and brown.
