One Pan Andouille Sausage and Rice Recipe Andouille
Several of my dinner recipes (especially the cajun ones) feature smoked or andouille.
How to cook andouille sausage in a pan. Mix together the cajun seasoning, onion powder, black pepper, thyme, oregano in a small bowl. Spread out into a single layer and return to the oven. Slice the andouille sausage and chop the onion, garlic and tomato.
You can also bake or boil it. Add drained and rinsed beans and the undrained tomatoes with green chilis. Reduce heat to low, cover and simmer 6 minutes.
If baking, preheat your oven to 350 f and place the links on a sheet pan. Add olive oil, chopped onion, peppers and garlic and let cook stirring occasionally for 5 minutes. Preheat a pot over medium heat and add in the sausage.
Sprinkle with the remaining cajun seasoning. Heat up a skillet over medium heat and add about 2 tablespoons of vegetable oil to the pan to keep the sausage from sticking. Heat oil over medium heat, add onion and cook until translucent.
Bake for 15 to 20 minutes, stirring once or twice during cook time to ensure even cook and prevent sticking. Picking the right sausage for this dish is important. Cut smoked sausage sections in half lengthwise or into 1/2″ slices.
Lightly spray pot with cooking spray and place sliced sausage in skillet. Cook for a few minutes until the sausage is browned and cooked through. If you haven’t noticed, i’m a fan of smoked sausage.
How do you cook andouille sausage on the stove? Slice the sausage into ¼ inch slices on the bias and add to the pan. Take a sharp knife and cut the sausage from one end to the other into small pieces about half an inch big.
Andouille is a versatile cooking ingredient. Clean the mussels and discard any with damaged shells (for full cleaning and debearding instructions, see above post). Cut the andouille sausage into bite sized slices, remove any tails from the shrimp, finely dice the onion, and mince the garlic.
Add garlic and sausage and cook until the sausage is browned, being sure to stir so that the garlic does not burn. Heat oil in a large. Heat a large pot or dutch oven with a lid to medium heat.

Add the olive oil and sausage to a large pot over medium heat. Sausages can also be baked in the oven (a good method to use if you’re cooking something else in the oven).
